The  Murdercycle, a 1980 Honda CM200T TwinStar is a small bike. I've replaced the tiny original rear shocks with used CB350 units. They work great alone. But 2 up with SWMBO, we bottom out. I'm noticing rub marks on the side of the rear tire from the inner fender.

Can I add rubber bump stops to the shocks without disassembly? I want to try to stop the suspension movement right before contact is made.

Any ideas?

You don't want that. you want a shock that is properly set up for the weight using a combination of spring stiffness, pre-load adjustment and valving/fluid. 

 

A car is OK to run on bump stops at the limits, as consequences are less severe.  You may think that when it is on the bumpstop, it is like riding a hardtail, but not when you find the bumpstop while turning and hitting a bump. 

Spending $300-ish on some shocks is well worth it to you and your wife's hide.
