Made my own ground breakfast sausage this week. Very greasy, but good. Tried to cook them like smash burgers and it didn't pan out

The next set I performed them a bit and they came out much nicer 

 

Now they just need bagged and frozen. Plan being to pull them out for quick and easy breakfast. 

I'm debating doing scrambled egg patties too so I don't have to cook fresh eggs every time

Dig the sausage.  Have kicked the idea around but haven't done it yet.  Wiffee got me a cheese making kit so that's my next planned experiment...

Sorry, no pictures.   Breakfast!  Avocado egg cups.

Stand an avocado up, stem on top and  slice it in half.  Remove the seed.  Arrange on a sheet pan or baking dish.

Break an egg into each half and season with salt & pepper.  Bake at 425* for 15 minutes.  Remove from the oven and garnish with bacon, green onion, whatever makes you smile.

More breakfast porn!  I made this for Mothers' Day not realizing really how big a 9 X 13'' pan is.

 

Mixed Berry French Toast.

6 Eggs

1 3/4 cup milk

1 tsp. Sugar

1 tsp. Cinnamon

1 tsp. Vanilla

1/4 tsp. Salt

1 loaf of French Bread, cubed.  (1 pound loaf)

12 oz. frozen mixed berries

2 Tblsp. cold butter

1/3 cup packed Brown Sugar

 

Whisk together the first 6 ingredients.  Put bread cubes in a greased or oiled 9 X 13" pan.  Pour egg mixture over the top and cover, refrigerated for 8 hours.  Overnight worked for me.

Preheat oven to 350*.  Pull the frozen fruit and the pan out of their places and allow to warm up with the stove.  Bake the covered french toast for 30 minutes.

In a small bowl mix together the butter and brown sugar.  When French Toast is done, remove the cover and apply the berries and top with the brown sugar.

Bake uncovered for 15-20 minutes.

I made French onion soup last Thursday and Friday. Started Thursday with 8lbs of beef bones, dinner Friday was soup. Dinner Sunday was soup with bacon grilled cheese croutons. Definitely upgrade. 

 

Saturday I made mother's Day dinner early. Filet, bacon wrapped asparagus, salad, cheesy garlic bread from the loaf of French bread I bought for the soup. 

 

If you have a Trader Joe's nearby, the cheese is called "unexpected cheddar". If you only have an Aldi, like me, they have blocks of cheddar and Parmesan, as one block of cheese. I can eat it as a block, but shredding it then melting it? Holy E36 M3 Batman, a whole new level of deliciousness.

Honey-Ancho chili Butter  Is good for just corn on the cob, but I cut it off the bone, add red onion, red pepper, Mozzorella cubes and a splash of Italian Dressing.  Nice salad.

Peel an apple.

Core it.

Slice thin, 1/4"

Dredge in Pancake Batter and cook as a pancake.

Kids love this❤️

heaven and hell chicken Parmesan from my favorite restaurant. Hand beaded, pan fried chicken atop a puck of fried risotto with 3 cheeses inside, topped with the housemade red and housemade Alfredo sauces.

This is a Galette.    Like a pie but half the work.

Wife, son & grandkid went berry picking.  Place flour, butter etc in a food processor to make the dough, put down fruit, fold the edges up and bake.  Use parchment paper though, burned berry juice never comes off. 

You can also make small individual Galettes, we served it with a plop of home made Ginger Ice Cream.

Yesterday's dinner involved tri-tip smoked brisket-style. Season, toss on the smoker at 250F for two hours (temp should be about 160); then, wrap tri-tip in butcher paper and continue to smoke at 250 until internal temp reaches 200F. Let rest for 15-20 minutes, then slice. 
 

Result- brisket flavor for tri-tip price!

Been 80* + for 5 days, high 80s-90s until the hurricane makes its way up in a few days.  Too hot to stand over a stove.

Shrimps salad and a Mac Salad made with Acini de Pepe (BBs),  Better mouth feel, less mayonnaise.  Ciabatta bread drizzled with garlic oil.

Birthday dinner tonight was a smokestack from the Steel Plate in Monessen, PA. Previously seen above with the heaven and hell chicken. 

rack of ribs, as a crown, loaded with CRISPY tater tots, Mac n cheese, and topped with brisket burnt ends

this is what came home with me. 

Admittedly, the ribs weren't great. I think he steams them, or only cooks so many for these and let's them warm all day. The brisket burnt ends though stole the show as usual. Russell really knows what he's doing there.
