How to reupholster leather seats at home

Sure, there is probably a decent upholsterer near you, but what if you want to re-upholster those seats yourself?

The seats in our Austin-Healey Bugeye Sprite project were crusty and in need of repair, so we used a kit from Moss Motors to bring the buckets back to life.

My seats are fine but really hard.  What is a good leather conditioner or are they all the same?

Here is some info on how we refreshed the interior our 997 911. Tim used  Gliptone leather conditioner on the seats in there.

The leather in both Jaguars is in good shape no rips , tears, or torn seams. Except it's really dry. I mean rock hard dry.  
 Jaguar's leather is typical glove soft.  I've got several brands of conditioners but as I read the ingredients on most brands it seem like they all have beeswax and about the same contents.  
        If that's the case should I just use the least expensive with the same stuff or is one better than another?

I just finished my Tiger's seats, so this came out just too late.  Lots of good advice to be had here.  One idea not mentioned is to do one seat at a time.  Pictures are good, but having an original example to refer to while putting the first one together is even better.
