I am looking at a set of 17x8 wheels for my 2000 f-150. My question is what is the best tire to go wit. I was looking at a set of 255/50/17s but I  was wondering if they would be too wide on an 8 inch wide wheel

Nope. Put 255s on a few different sets of 8 wide wheels without odd wear issues

I had a set of 245/40 17's on my last set of 17x8 wheels and they fit just about perfectly.   I don't think the extra 10 mm's would make that big of a difference.

That's the size that came stock on the 94-96 Impala SS 17x8" wheels.

I have 315s on a 17x9 on my truck and they're fine. People run 285s on stock 8" or narrower wheels all the time.

Between 205 & 275 would be the range I'd run on an 8" rim, depending on the application & my pocketbook. 255 seems fine.  (Between 75%-100% of rim width is my rule of thumb)
