That's a bit less than stock C4 Corvette weight, and that engine is probably 250-300hp depending on its cam. So it may not be a screamer, but it should move pretty well.

There are an awful lot of trucks that combo that easily weight that much. They move along OK. Also, don't MBs tend to have pretty deep rear axel gearing? It's probably got in the neighborhood of 3.90/1 final drive, maybe even lower, it should go just fine.
My past experience with older MBs is that the chassis is easy to work on and pretty bullet proof, with reasonably priced parts, all expensive and difficult stuff is in the engine and drivetrain. Now this has the cheapest powertrain with a quality body wrapped around it.
3200 lbs is fairly light compared to what 350s have been put in. Plenty of trucks and SUVs had 350s and they weighted easily 5000 lbs or more.

If you're implying it could fit a larger engine, the answer is not without a lot of work. There's a reason manifolds are being used here, there's a steering box about where the collector on a shorty would be. All the 70s and 80s MBs were built around front sump inline engines, the crossmember and steering center link are in a really awkward spot for most American V8s, the factory V8 barely fits.
