Why do only you three get to have fun? Hell that's a junkyard day and done at half budget.
I'm surprised I caught this thread (I'm not on the forum so much these days). SingleSlammer just bought his 2023 Challenge car on Sunday, I think ;). https://grassrootsmotorsports.com/forum/build-projects-and-project-cars/i-may-have-a-panther-problem/211477/page1/
That one would be fun to put together. Cheap and easy, too.

I'm not good enough at being cheap, and fast, to bring it at 1/2 budget. But for 2? Yep. I could do that.
I don't know if the Challenge rules have evolved past "no tube frame cars" by now...but that last one has, I expect, exactly zero parts of any production car left on it as pictured. The "Modified" in the opening post would probably have only the front half of the chassis from an 80's or earlier GM G- or A-body (which may be argued as not *completely* tube frame).
I never looked closely enough into one of the "late models" (the 2nd car in the thread) but I know there's some serious sorcery going on in the rear suspension...which doesn't look conducive to use in, say, environments that aren't made of clay and contain straight sections or right turns. I kinda hope to be proven wrong on that, though ;)
