Yep. I remember them when they were new. We were scratching our heads about the idea then as well. Chrysler was definitely not risk-averse back in the 80's and early 90's.
I had a friend with one back when they were basically new. Three of us rode in it from Flora, IN to Davenport, IA and back. It was a little cramped.
I really want to like them, but can't decide if they are more unfortunate looking wth the top up, or with it down.

I picked up a nice Miata cheap once when a guy had it and one of these Dakota convertibles. His wife would only let him keep one convertible and he liked that the pickup was kind of rare.
Since they're a body on frame vehicle, and the cab is separate from the bed anyway, I doubt feels any less stiff than the normal cab. I would think a good roll bar that ties to the sides of the cab would make it indistinguishable. Play with the stance and the tire/wheel package, headlight/grill updates, etc should make them looking pretty good I think.
