Which generation are you looking at?
depending on your desires for quickness, MPG, and/or 'Murrica, might i suggest a Miata? because you said convertible, fun, reliable, and under $7500.

You can get a really nice NC miata in that price range, and I suspect that it will hold it's value far better than the mustang.
As a 3-time NC owner, I concur, but they don't have quite as cavernous a trunk, or back seats.
I was looking for a ~5 year old Mustang convertible in blue metallic and came REALLY close to getting one before finding the yellow Phoenix. The Mustang was advertised as a manual, but had the 10 speed auto. Surprisingly not bad - but not what I wanted.
I'm thinking a later S197 (2011-14) with a V6 and a manual might just fall into that range. 300hp, very good MPG, and it won't have the insurance hit of a GT for a younger fella such as yourself.
Mentally, I am assuming Fox body.
I know you said texas, but check the front frame rails whee they meet the shock towers. Check the kickpanels esp the DS for rust down low. Then the torque boxes and seat mounts for tears. Convertibles collect water in the rear foot area if they leak, so rust.
Collision. look for ripples in the front frame rails. The collapse as crash structure in front of the shock towers, and also just behind the shock tower where it is harder to see.
Check the lower rad support crossmember. When being pulled from the crowds, the tow truck operator often just tosses the hook on this cross member and hauls the car off the pile of bodies.
If it has EFI and the wiring looks like it has been messed with, walk away. Give the various sensor connectors a tug to make sure that all the clips have not been broken off
And heater cores. Make sure it was replace last week or it probably needs one.
