something about the delivery of the power was... uninspiring
I had the same feeling. It feels like my SOHC neon/stratus. Great midrange, happily goes up close to 7k, but the only reason you ever take it all the way to redline is just so you'll land higher in the next gear. In short, it needs VTAC!

I got 38 mpg hypermiling my 1991 Miata for a tank! All in town too!

Lol. Or a turbo.
It is still a strong contender. And I have no doubt it is an absolute blast on the track or autocross course. But this will be a daily driver first, and for something that is going to be on the street rather than the track 99.99% of the time, I would rather have something that feels faster than it is, rather than is faster than it feels--at least within this class. And on the boring straight roads that we have here in central Illinois, you definitely want it to feel "fast" in a straight line. My NB Miata feels fast in a straight line compared to the BRZ.

On a 1.6 Miata, I would easily believe it. I've done 32 in town in my NB with the 6 speed. But it is an extremely annoying driving style that is not worth the $10 a month I would save.
Even though you don't want a VW, I will still throw out a 5th gen Jetta TDI and get an aftermarket rear sway bar to make it rotate more. It's rated around 40mpg in the city and better handling than comparable hybrids.
I would also consider an E46 328 or 330. I read about one owner in a Bimmerworld mag that put a diesel diff with taller gears get 40 mpg in his gas powered car.
