No glue and ditch the shims. NVH doesn't matter for racing, but additional parts that melt, burn, and/or cause a brake pads to drag at racing temperatures are a problem.

Pretty much the only point of shims is to reduce noise, right? I would follow the above advice and just throw them away, I don't even run them on street cars.

you probably want to get rid of the shims

Shims can help keep heat away from the caliper piston.

No need to glue them though.
