The Outback Wagon is too obvious, I would want an SUS.
Add some decent tires and bigger mud flaps, rally the crap out of it, then sell it for what you bought it for.

I may be biased, having just bought one, but this is my answer as well.
Replace the rear diff fluid with Honda Dual Pump fluid every 60k and check the valves every 30k or so, and its basically an integra/civic with ground clearance and awd.
Be warned, its not full 4wd, i think it sends about 20% of power to rear and only when slipping. I have found it to be plenty to get me unstuck however, as most of the weight is up front with the primary drive wheels. The trade off is way less wear on the awd system during normal 99% driving and better mpg.
I'm seeing plenty of Kia Sorento's available for around $1500.

Cool, thanks folks. The Escape trio had been toward the top of my list as I had one for my first car and loved it, it did very well in snow and the first few years allow you to lock the slip-n-grip setup to "grip".
The CR-V could be a contender although it's a little obvious. LOVE the idea of a Rendezvous or RX300.
Anyone know how good Mercedes' 4Matic is, say, in an old E-class wagon or something? Would be akin to the Subaru scenario of "definitely could, not sure if should" given ground clearance.
