Most of my cars (and motorcycles) have been limited production or otherwise unusual. Probably the most oddball was a 1967 Opel Kadette wagon.

A high school friend had a Kadette wagon........I recall trying to do donuts in a parking lot.
I seem to generally end up with the less common version of common cars. 1st gen Jeep Grand Cherokees are common as dirt (or at least they used to be). But the 1 year only, top trim ones with the bigger 5.9 V8 were low production, so of course that's what I've got. That one isn't much of an attention getter unless an old muscle car guy hears it running though.
My BMW is theoretically not super rare or anything, but it stands out to people and I can't say I see a lot of them. There are a handful of E38s around locally, but I've only seen 1 other silver short wheelbase one in town (also a sport package car like mine) and I last saw that one a couple of years ago. It's unique enough in the area that I've had a few people comment that they saw me driving somewhere just because they recognized my car. And some of those have come from people that aren't into cars in the slightest.

Mine had the 1100cc engine, it would have had to work hard to do donuts on glare ice.

I've always lusted a little for the e38 sport package cars. I drive an e28 M535i in the summer and an e30 325iX in the winter; I used to think of them as just older cars but it's gotten to the point where virtually every day they draw attention from other people, whether they're BMW fans or not.
Sometimes, yeah, I do think it’s almost too easy to seek out the most desirable model.

“I have the base model: no a/c, no radio, white wall tires and a three-speed. Oh, and it’s beige.”
I always seemed to seek out the oddball small production cars but it wasn't because they were rare, it was because they had handling, or straight line performance or whatever. Examples - TVR Grantura Mk 3 (c. 70), Lambo Islero S (100), Jensen CV8 (500), MGA Twin Cam (c. 2000), 1988 Fiero GT (manual), 2009 Solstice GXP coupe - manual (283), Swallow Doretti (276).
I'd bet that a lot of people that hang out around sites like this buy cars that aren't the average beast and have relatively low production numbers.
