Aside from detractors asking "why", can I get an idea of what can legally be removed as far as sensors, modules, wiring etc. and still be driveable?
Imagine tearing out the interior, carpeting etc and then making it look as clean and uncluttered as possible.
If one wanted to just jump in, fire it up and drive without the extra doo dads etc.

woah. Does it need to pass emissions? What's the powerplant?
I envision lots of problems unless you have the capability to code out the modules you've removed.
A friend of mine drives his stripped/gutted EG Civic to events. He is in a non-emissions county. He has a working horn, wipers, and lights (headlights, hi-beams, brakes, and turn signals), and hand brake. All comfort and convenience is gone - just 2 seats and seatbelts. He did retain the factory gauge cluster. I don't know if it ever had air bags. Hope that gives you a minimum to go by.
Depends on if you're keeping the stock M5x in it or not.
Then comes the time of removing modules one by one and seeing what does/doesn't work on the car any more. Having a laptop and ISTA will also help to keep your dash from looking like a Christmas tree.
As far as legal, I don't think there's a law that requires everything to be in the car, but some states probably have some sort of an inspection.
I imagine a lot would depend on emissions regulation and safety inspection in your area. In my area I can do that without anyone batting an eye.
Edit: if you drive in cold winter months, keep part of the heater or get an aftermarket heater for a Jeep.
Well, it's hard to put into words but if you tried to turn the car effectively into a fuel injected 1960's muscle car.
Or maybe turn an E46 into an E30
Lights, wipers, heat, single DIN radio...
As long as it has the legally mandated things such as exterior lights, wipers, and mirror...I think you're all good.
And of course any emissions related things that are required in your state/federally.
Also heavily depends on the type of engine management planned for use. Probably not easy to defeat the anti-theft system if using stock ECU, so that stays. ABS system stays (and probably traction control with it). Delete SRS system. Delete emissions systems. Delete central air module/systems. Delete central locking systems. Delete stereo systems. Google-fu will provide better answers specific to the e46 chassis.
