I've noticed that my wife's car seems to have a strong tendency to want to follow the crown of the road. On some roads, the steering is neutral (so I'm assuming they are nearly flat or the angle couteracts whatever problem there is), but on others, it feels like you need to constantly fight the tendency to pull it back toward the crown. Could this be an alignment issue?

Yes and no.

I suspect that an alignment HAS been done and that is the reason the car follows the crown as much as it does. Caster and toe adjustments will correct it but may increase wear or decrease steering feel.

Have the alignment done at the dealer or a REAL alignment specialist if you have a good one nearby.
