I'm looking to pick up 2 in the size 225/50 16, but not having much luck. Only the C51 compound is available at the tire rack and other sources. Are they just out of stock for the moment, or has it been discontinued?

That combo is still listed on Hankook's site, so if it was discontinued, it's probably pretty recent.
I bought my Hoosiers last year because the 225-45-15 weren't available in the soft either. Then they restocked them about a week later
It was also around April when this happened.
Hankook doesn't seem very interested in keeping inventory flowing on their tires.
