Predictably, I miss most of the ones which are gone quite a lot. Especially the E28 and GTI. The E30 was the best autocrosser I've ever had.

1995 Acura Integra (but an LS, not a GS-R)

Lexus GX470 (if you consider the LandCruiser Prado iconic)
2016 Toyota 4Runner (1st gen is iconic, 5th gen not so much)

Lexus IS300 Sportcross (rare, but probably not iconic)
Mercedes W124 sedan and wagon (I'd argue these may be the most iconic, at least when they were introduced)

I've owned not one, not two, but three AE86 Corollas. And an AW11 MR2. That probably counts for something.
I also have a 1986 Toyota 70-Series Land Cruiser.
I also have one of the ABC JDM kei sports cars, a 1995 Suzuki Cappuccino.
That's probably it for me and iconic (unless we include bikes) or unless a Toyobaru or KP61 Starlet is iconic. In any case, I've still been blessed and experienced some iconic vehicles!
The iconic part is likely subjective.
I didn't include the 1200; while they are well loved they just don't have the 510 or 240Z status.
We've had a Ford Galaxie that I used as a tow car and while cool, I am not sure it's iconic.

A whole crap ton of vintage iron like corvettes and Tbirds. Bunch of 356's. Not sure where you draw the line.
The only truly "iconic" cars I've owned are the E30 M3 and 190E 2.3-16. I've had a few examples of each over the years. They do live up to the hype. The M3 has always been an icon ... the Mercedes is maybe on the way, but not quite there yet.
I've also owned a few Lancer Evolutions. Those certainly are iconic to me (especially the early ones, like my old Evo II GSR), but I'm not sure everyone would agree. I've currently got a Peugeot 405 Mi16, which I think also fits the bill.
Besides the homologation specials, I've had a TR4, TR6, and Alfa GTV (Bertone coupe). I'd consider all of those iconic sports cars.
