How would you build an NC miata for "everything?"

Will that also get rid of the Death Wobble that NA/NB like to have around 70mph?

That's not a death wobble. Ask a motorcyclist or cyclist what a death wobble is! That's just a shudder as the chassis resonates at its resonant frequency thanks to out of round or out of balance wheels and tires. It's annoying, but it doesn't put the fear of god into you the way a death wobble does.

I would build it to STR and refuse to pay less than 2 grand for your coilovers.

As I mentioned, I had XIDAs on the NA track rat.....I'm not willing to go below that level of quality.
