How about the triumph 955i from the st, not the Daytona? Nice big triple. I happen to have an entire bike in parts in the garage.
I have no experience with those, I would say get a gocart and see if you can scare yourself! Bike powered gocarts are pretty fun. Buy stock in tires.

A bike powered gocart may very well be the most reasonable option here. I would like to build one. It would be good practice for welding if I build the frame and everything too.
