There is an entire V6 MR2 sub-forum with 1,855 separate threads and over 33,000 postings, just about V6 conversions.
The mk3 spyder is actually only just starting to happen. There are tons of mk2s running around with 90s camry motors (3vzfe and 1mzfe). There are only like 3 or 4 mk3s with 2grfes though.
The MZ v6s will bolt up to the mr2 transaxle. 3 out of 4 engine mounts are on the transmission, and this takes care of axles,etc. You're left with fabbing a passenger side mount and an exhaust.
The newer 2GR V6 is more challenging.

I can get behind the idea of the MR2 Spyder being a poor man's Elise when the MR2 and the Elise share the same engine.
If that engine is replaced to a Camry engine does this then sort of become the poor man's ... Camry?

They don't share an engine, that's the problem.
Luckily, the 2zz + 6spd is not a hard swap.
With a Camry engine, it becomes a poor man's Evora.
