Look at turbo tech 101, 102, and 103.
There are several decent books out there as well. I have Corky Bell's book and the one by Jeff Hartman.
Also try this turbo calculator. By comparing different compressor maps for my projects and seeing the lines plotted out on the map helped me understand what I was looking at.

Go through the one Bluej posted, when you get down bottom, you'll see the plot that takes the compressor map and overlays engine VE at various RPMs and pressure ratios, that is what you want to eventually understand how to make. I spent some time making a good engine VE calculator in Excel and overlaid our compressor map. I was then able to take my MegaSquirt data logs and back out all the environmental input parameters for a given run to determine what and where our engine was actually putting out. Since so much depends on the specifics of any given motor, intercooler, cams, flow through the head, exhaust, ambient conditions, etc. it's worth it once you go turbo to get your engine's baseline setup. That way when you start thinking about moving to a different cam, or porting the head, or or or or you can actually 'try it out' on paper first and get a really good idea whether or not the modification is worthwhile or appropriate for your needs.
