That could be a vintage tag line, but it also applies today to the Veyron and the new Mercedes production car, the AMG One that set the record lap at the Nurburgring. Is there a market for even the 275 they plan on selling?

There sure is but it's not people that are going to drive it.
I read that a big hurdle for this was getting an F1 engine to behave like a road car's.

What do you mean?
All 275 have been sold out for years. The US allocation sold out in 2017.

And getting it to meet emissions standards once it could behave like a road car engine.
