I know that I need to check the timing chain, but aside from that, is there anything I should do before getting this engine into my W126? I know I should go to a marque-specific board, but to be honest, I really only trust my fellow GRMers.

From what I have learned if the timing chain is good, the rest is bullet proof. But they are subject to oil leaks especially the rear main which is some sort of rope type affair that requires special tools and may leak worse if you touch it....
Check chain stretch, new valve cover gasket (can do that with the engine in the car too), new oil filter housing gaskets, new rear main seal maybe.
I'd probably throw a timing set at it unless it looks like it's been done recently. It's not just chain stretch that is a concern, it's also old guides coming apart. Then reseal any oil leaks, set the valves, fresh fuel filters, go.
Yeah, I am fretting having to replace the timing chain. It looks pretty intense, and I really do not want to berkeley that up. I figure I should add the oil filter gasket and turbo oil drain plug to my ever-growing list.
I am also concerned about the oil cooler lines. I hear that those are a bear to replace if in the car, but they're expensive.
On the plus side, Rotella is on sale here at work for $12.99 a gallon. I think I'll stock up.
Forgot about the oil cooler lines, that's something to look at too. These cars aren't really that bad for operating costs, once they're operating correctly.
