The 3rd-gen. RX7 could be had with a red interior as well.
I have an S197 (05) with the red interior. I'd be very surprised if the seats ere small enough to fit in an early body Cuda. They are huge - nice, but huge. I'm 6'1" and 240lbs, I have wobble room and don't have to raise the headrest at all. I guarantee they would not fit in my '97 Explorer, and they are far larger than the buckets in my wife's '14 Mazda 6.
Also, you had to get the upgraded interior to get the red leather - which included 6 way power driver's seat. The passenger seat is manual, but still the same size. And it sucks because you can't adjust it to fit correctly. Interestingly, the first couple years of the S197s you could only get power on the driver's side, manual was the only option for passengers.
And BTW, the power seat weighs something like 90 lbs.

I just know with the chassis mods (much better shocks, subframe connectors, torsion bars, and sways on both ends) and the new 340 motor, I'll need a little help staying in the seat.
If any of y'all are in the austin area and want to check it out just holler. I'm going to be spending the summer hopefully getting it all assembled and build out the way I want it.
I don't have pics, but some 7th gen Celica's have black & red cloth buckets (not sure if this was also available in leather) and don't the "R-spec" Hyundai's (Genesis coupe & Veloster) have red leather?
Pretty much every performance car was/is available with a red interior, but generally they arent very common.
I second the thought of staying with an old see. Just get some buckets from a similar vintage mopar and recover them.
If I had it to do over, id go with the legendary raylle seats. Covers match, comes with the foam, and super comfy. Also do a fair job of holding you in.

Not sure about their looks in a classic.
My first car/boat, '77 Pontiac Grand Prix, had red vinyl seats. Scorched in the summer, froze in the winter.
