I'm surprised at some of the responses. I too collect Edison cylinder players and old clocks. Also: 1920s radios, coins, guitars and old amps, old British cars/MC, I have a complete set of vintage Star Wars action figures - nothing after 1985, old Porsche race car documentation.
I try to collect nothing. Not very good at it, but at least for the most part I don't collect anything. Used to collect leathermans and Swiss Army knives. Got out of that pretty quick. I guess you could say that I still collect guitars, but I'll buy and sell freely--only two that I won't let go. And I only have 6 right now, not much of a collection wen at one point I owned 10 at once.
More than thirty years of Road & Track, 15+ of GRM, other assorted sports car magazines, about forty years of Christophorus (Porsche factory magazine) and a bunch of Porsche sales brochures.
Hot Wheels, targeted to realistic reproductions of sports cars and race cars primarily from 1960s to 1990s.
Some pennies and state quarters.
I'm anti-stuff so I don't want clutter. And I don't pay much for anything I collect. And I try to limit any attachment to material goods.
I've started a collection of old hand tools. It started with my grandpa's old brace and bit drill I brought home when he died. I hung it on the garage wall with some of my other keepsakes and thought it looked cool. Then I started realising how often you can find a box of old hand tools at auction and garage sales for $5 or less. I usually end up with one or two really cool or oddball tools and a box of scrap metal.
I've got somewhere between 300-400 hotwheels, plus I collect model cars which "I'm gonna build someday". I build about 1 model a year and probably buy 4-5.

Oh, and numismatics, silver, some pocket watches, beer cans, stereo equipment, and more car paraphernalia.
Cameras and lenses. Mostly Nikon. It started with a couple of vintage bodies that my dad passed down to me. Since then I've added to the vintage stuff a little bit when I found a deal, but largely been buying modern-ish equipment for the two DSLR bodies I use on the regular. The lens collection isn't vast, but it's getting to the point where I have to admit to myself I simply like owning the additional glass more than I'm reasonably going to use it..
Socks. No man should have as many different types and styles of black socks as I have. Worst of all, this was not intentional, I have no idea how it happened.

I have 1 pair of black socks. They go with my suit and are basically only worn for Job Interviews, Funerals, and Weddings.

Good answer, I try to do the same.
The only other things I'm actively collecting are TV shows, books (mostly in ebook form), movies and games that I enjoy; and hidden knowledge, I have an impressive collection of both.
Car parts stickers, which is harder than it should be. Over half the parts I order do not come with stickers anymore, which is partially a let down...
Also video games. I buy games I always 'wanted to play / want to play again' for various systems, but now I own them and I still don't play them...

Now wait, if you are going to do the black sock thing, this is The Way. Toss all of your current black socks. Go buy 15 pair of identical black socks - I got black athletic socks. Buy good ones, since they will be around for a while.
Never sort socks again.
Other than terrible cars, I collect lots of stuff. Biggest collection is my video game collection, by far; I've nicknamed that collection "The Beast". Here's just some of it:
I have just about every console from the Atari 2600 all the way to the Nintendo Switch, save for a few hard-to-find ones. And yes, I play all of them.
I also have an extensive collection of vinyl records (mostly rock and metal stuff), a ton of diecast stuff I should really just unload one of these days (It's been sitting in storage since I moved almost 8 years ago), and lots of musical instruments. And yes, somehow I'm still married.
