I’m wondering this from the drivers perspective. After they finish the race and everybody has their giant hurrah, what do the drivers do next? do they just go home? In particular, I am referring to F1 racing, as I will be going to circuit of the Americas this weekend

Aside from the fan drama, what are they required to do by the sanctioning body? Do they have to stick around for post tech inspection? Report to the head mistress for a paddling because of that naughty rub they gave a competitor?
Speaking from sports car arrive and drive experience, they leave almost immediately. Working as crew I have seen them gone before I am done breaking down the pitbox.

I believe F1 drivers are required to provide a media interview after the race, Vettel got a (non-race) penalty for skipping one recently after his car broke. I dunno about tech inspections, but I would imagine that's a team thing, rather than a driver thing. Certainly if there's an "investigation after the race" for some infraction then the FIA is going to expect the driver to talk to the stewards.
From what the commentators have said in the various races I've listened to, it sounds like many teams have a post-race debrief at the track with the drivers and engineers. If they do particularly well at the race, then there's probably a celebratory dinner at a restaurant near the track as well.
"arrive and drive", yeah, the whole point is that you pay money to show up and drive the car and not have to worry about anything else.
Back in the day, Jeff Gordon crashed out early in Daytona. He gave a brief “What happened out there, Jeff?” interview, hopped on a jet and was back in Manhattan before the race ended. In the big leagues, drivers do press and go home way before the team is done loading the trucks.
