Wonder how smart it is (probably non-smart) to take a base-trim car and add just the bits you want by trading around and watching forum for-sale sections, etc as well as buying parts new.

I'll start with the caveat that it's always better to start off with a better car than to try and build on a worse one. But there are certainly worse cars to attempt it with than Mustangs. Granted, most of my experience was in Fox bodies and SN95s, which were essentially Lego cars. But the S550 is going into it's 7th year of production and has always been pretty popular, so I have to think that there's a pretty good secondary market out there for parts. And you know the aftermarket is strong.

You'd just need to upgrade the shocks, springs, sway bars, brakes, radiator, differential, wheels, tires, get rid of the crappy base head unit, and maybe swap in some Recaros and a bit of nicer interior trimmings. Then there's the matter of the driver selectable drive modes (normal, sport+, track, and snow/wet) and EPS/ABS/TC/SC tuning, that may or may not be offered aftermarket for the V6 cars.

I test drove a few different years. The stock shocks and spring rates are utterly terrible.
Fun car though
