i've had my 87 GMC pickup for 4 years now, and the 1971 vintage 307 that's in it hasn't had oil pressure after the engine warms up since long before i got it. it has 30psi cold, and you can watch the oil pressure go down as the water temp goes up.. it has a slight lifter tick when warm, but it won't die and the oil leaks from the intake valley and passenger side valve cover tell me that it's getting oil to the top of the engine...

They are both good filters but have different applications. The Mobile 1 is a good, if expensive, all around filter. The K&N is designed for high pressure and high flow, at the expense of some filtering ability. It's probably not the best choice for daily driving 3000mi plus oil changes.
Update:
Flushed the engine and pressure went up slightly. Figured I'd try 20w50 and a new filter. When I took the old one off here is what I found.
Filter was only on there for 50 miles before the oil pressure problems. I would think that even if it clogged the bypass would still allow oil to flow. Anyway with the new filter and oil the pressure is up to 60 psi. Drove the Jeep for 12 miles and it never dropped.

Huh strange that the bypass didn't open to maintain oil pressure. You should contact STP about the faulty one.

You can hope they'll investigate it. Or you could make a big stink about it on social media to make sure they will
I have had issues with STP filters as well. I will NEVER use them unless it is an absolute emergency and I have to have the vehicle running and it is the only one on the shelf.
Hrmmm... i use STPs on the MX6 and the Cherokee... looks like i should stop.

I got a free STP filter from Auto Zone some months back, some kind of promotion for buying 5 quarts of oil. Just put it on the Truck at the last oil change, no problems with oil pressure so far, but seeing this I'm pretty sure I won't be buying another one..
I have two STP filters that I got as part of an Autozone promotion, it was cheaper to take them with the oil than to get the oil without them. I will never install them.
