The amp draw of those kits is pretty high (and this published spec seems low for 3500-6000BTU cooling). Published specs is 550-600W, 600W at 12V is 50A. You can make them run, but you definitely need a high amp alternator and some big wiring. Advantage is if you have big enough batteries you can run the A/C for a few hours with the engine not running which is a neat feature.
I would plan on everything being pure Chinesium, which means the lines will leak, the fittings will be softer than overcooked ramen, the wiring will be thinner than thin, and the parts will all be impossible to source replacements for.
Same ideology of making an electric supercharger work. Like yeah it will work with enough electrical draw.
There is an electric AC for Big trucks with sleepers , many Truck stops do not let the truckers idle all night to keep the AC going ,
Not sure what they do about Trucks that have Ice Cream etc as the cargo !

The trucks you see with the A/C on and the engine off do it one of two ways:
- Plugged in to shore power
- APU (auxilliary power unit, fancy name for a small diesel generator)
Same with reefer trailers - either plugged in or on the APU. Reefer cars have their own little fuel tanks and diesel engines to run the refridgerators or freezers.
Trucks also have the advantage of being big, with big engines, big batteries, and plenty of room for the big wire required to run one of these units.

But this is more to show that there exists a 12V A/C system that is available on the market. Still have to deal with the air inlet and exhaust to the heat pump. By doing the kit, you can put all of that outside and just have the cooling part inside.
We have a 10k BTU portable unit in our camper, and the data on that would track the claims in terms of power. As well as all of the data I've seen posted about the above linked a/c unit.
Something like this would be really interesting in our camper, too.

Some semis now even have an "APU" that is just a big (like electric sportbike size) lithium battery pack that charges up when the engine is running and goes in the same space the traditional APU would.
