The main issue with a conversion van is they don't convert from a people hauler to a cargo hauler easily. The seats are bolted in and are not really designed to be removed or reinstalled quickly. I say this from personal experience - I had a '90 E150 raised-roof van for a number of years.
I currently have a '08 Grand Caravan. It does both tasks quite well (and gets better MPG - low-mid 20's vs mid-high teens), although it's a bit small for camping. I tried camping with it and was disappointed.
