The terrible 2s are approaching my daughter, as are some long car trips. I have no clue as what to look for in these things any suggestions?

If you are going to have a co-driver, they should read to the kids. It teaches more vocabulary words than any video ("educational" or not) will.

That is the plan for the most part, there is a point where my daughter screams blood murder from not be able to sleep well in the car. We really don't watch much if any video at home either but my daughter has seen some things in passing and is instantly mesmerized.

I am actually thinking about putting some kind of picture slideshow on together for the ride to help with her recognition of random things and maybe start on some simple words that she already knows. I am not going to be able to take the purple dinosaur how some parents play it over and over.

Youtube+Mickey Mouse Club, Bo on the Go, or perhaps Minnie's Bow-tique. We use these under EXTREME duress from our cellphones.

When it's time to cross the continent we do break out the iPad and let them play games. I have four (kids, not iPads) and they each get 10 minutes and then have to wait half an hour for their turn to come back around. Not sure how that would work with one. We did a lot of reading to them in the car when they were younger and then the older ones learned to read to themselves. Coloring books are good too. Twice a year we do 20 hours each way and we haven't done movies yet.
