...cuz I am not coming  up with a clear winner meself, though the first Guardians springs to mind. So let's hear it!

Mallrats. I never questioned the Thing's junk until then. I doubt Stan did either.

Guardians 2. The Spider-Man one where everything got wrecked behind him was good too.

I'm fond of the one in AOU where he drinks Asgardian liquor, but yeah, probably Mallrats.

In the LEGO Marvel Avengers video game, there are dozens of subtasks where you have to solve puzzles to rescue Stan Lee from a variety of ridiculous situations.  All with voiceovers by The Man himself.

He's also an unlockable player character with most of the superpowers.

As long as they don’t CG it, I would like to see cameos in the future like the bust of Egon in the new Ghostbusters.  

Mallrats is my favorite because I don't really watch Marvel movies.
