Open the hood of a V12 Jaguar. The one with the 4 giant carbs that wind up flowing more air than a Holley dominator but are basically 4 big lawn mower carbs is butt simple to rebuild, get working and can be modified with nothing more complicated than a drill.  
 Open the hood of one with EFI and you'll slam the hood down and go screaming into the night in terror.  
It's actually a simple system but requires all sorts of knowledge to get running properly with all sorts of gear and miles of rubber hoses to replace. That is assuming the ECM hasn't deteriorated past operation. If it has you'll need to send it to an old geezer in England ( XJ6 ) to have it taken apart and  completely resoldered etc. 

Nope he doesn't know how to tune it for turbo's or E85.  And he'll guess at getting it close enough for any other combination that he does know about. 
 
 

Hey, it's really pretty much the same with most German engines except certain favored ones. early VW's?   Alfa Romeo?  German V12's? 
really anything pre OBD2 including Corvettes and Camaro's  try fixing a late 70's 80's  Cad Buick, Olds Pontiac.  EFI and making more power with it.
