This question was asked by someone who, surprisingly enough, is not only a non-PETA-member, but a scientist:

IMO, if they don't want us to see them humping or pooping they wouldn't do it in plain sight of the cameras and all the other animals. And FWIW, If I was an anima^[^[woodland creature I wouldn't care
My dog is licking his nuts right now. I'm sure if it bothered him that someone might witness this most private of coveted abilities... he could choose anyplace else in the house. So, he is either an extrovert or.... just a berkeleying animal that will lick, berkeley, E36 M3 or hump pretty much anywhere the idea strikes him as good.
I wonder if choking the E36 M3 out of people who advocate animal privacy should be done in public.

Maybe some species actually quite enjoy being watched. In fact, I'm pretty sure one of those tortoises is winking at the cameraman.
"Humping" is just a natural part of nature and nothing to be ashamed of. To suggest that anyone or thing should be embarrassed by perfoming this totally natural act that has propigated species around the Earth forever is rediculous.
That said, have you ever seen two Bambis tie each other up, or a wild boar with a leather hood and a ball gag in his mouth? No! That's embarrassing and why they do it outside the prying eyes of humans.
They just want to show off. "See how inferior you are, you can't reacha but I can" or they want you to know how much more they are getting than you.

The scientist is a lecturer at the University of East Anglia. That's the same august institution where other scientists manipulated and mis-represented data in the "climate-gate" case.

wow, this really is an "off-topic" topic.
A comedian once did a bit where he suggested that the chief difference between people and animals was that animals had no regrets/conscience. As an example, he said do you really think Fido sees a good looking lady dog walking down the street and thinks to himself, "Dang, I had a chance at that last week and blew it....what was I thinking?"
Animals don't care if you watch them do anything, BUT, you can un-nerve them by getting up REALLY close and staring at them. (At least I think it's the staring that does it, it could also be the invasion of space that freaks them out.)

A friend of mine has a dog that is CONSTANTLY raping this random pillow they keep outside near its bed/cage. Its funny every time I witness it.
We'll just be working on his car or something and randomly the dog will just walk over, get the pillow, and go to town on it.
Its almost like he wants people to watch. Odd.

This. I think you hit the nail on the head.

I had a siberian huskey, she would literally balance on her front legs when peeing or pooping.. and then turn her head to look up at you like "do mind?"
You know what's funny, cats don't care if you see them poop or anything, but if they can't bury their poop they act like something's horribly wrong.
I read the title as, "Animals, do you want to see them humping?" and I was all like, "Well, that's what the internet is for, isn't it?"

Things are never the same when put on camera, or under scrutiny.

Is it time to bring back that "GRM or porn?" thread? Sheesh.
I think it's kinda like a neener-neener (sp?) towards us. "Hey look at me, I can whip it out, go to town, and nobody thinks twice. Let's see what happens when you humans try that..."
