We got my fiance a Supernote Manta last month and she absolutely loves it. The only reason I haven't just bought the same thing is because now that I've bought that I see this particular market has exploded with different options, software interfaces. Some are specific to the manufacturer, some are based on Android, etc.
The impetus for this is I prefer taking notes on paper vs using OneNote on my computer and studies have shown that physically writing down your notes can aid in remembering your notes vs typing them. And we wrote on one at Best Buy before getting hers and it's cool how much it feels like writing on paper.
I was mainly curious if anyone had any experience with any of the other options like Viwoods, XP-Pen, Boox, and many others. Remarkable has the largest screen, but a serious lack of import/export file types and software features. Some now come with ChatGPT already integrated, voice-to-text, they all do handwriting to text that you can export, etc.
Not much to offer but one of my facilities handed these out to leaders once. I think it was the remarkable one. Anyways. A few people hung on but most stopped using them soon due to difficulty of use vs paper.
Can you write over documents on these and then save? Then do it again multiple times? I have driving logs for my students in a binder that I track their progress with, but it gets bulky and the pages start to fall out. Would love to find a digital format that works in the car.

Yep. And then you can export the notes to your computer, delete them off the device and take more. But depending on the amount of storage you can literally have hundreds of thousands or millions pages of notes in multiple folders, etc. Monthly calendars with to-do lists, all kinds of stuff.
And here I am using a leather-bound Moleskine (graph paper of course) and a pen like an idiot.
Ive been rocking this daily for the last 5 years and I love it. Still looks great, getting some nice patina. And when I drop it from 30 feet off a machine, I just go pick it up.

I use the notepad app on my phone daily. I use the microphone to dictate into it. I can export that into an email or a file on my laptop. Don't know about memory because I don't have one and this way I can quickly open my phone and dictate a note to myself and then I don't need to remember anything.
Not to derail the conversation, but I'm curious if anyone has any recommendations for an E-Ink tablet designed for typing, as I like writing stories and screenplays in my free time.
I know most, if not all, could be connected to a Bluetooth keyboard, but I'd just like to know if I've seen all the options available on the market.

I had a little bluetooth keyboard for a normal Samsung tablet a few years ago..........I hated it. It made a laptop keyboard look positively old school Cadillac sized.

Oh yeah, I've seen those before. I definitely like the idea of a standalone device that's only for writing–it helps my brain focus better than a laptop.
(I have one saved on my Amazon wishlist in the off chance someone buys one for me.
