Right now I'm digging The Cheiftan, a tank show, by a retired tanker. Lots of walk around and history. Rex's Hangar and Ed Nash's Military Matters delve into completely obscure aircraft, with lots of British, French, and Russian aircraft.

I always love Home Built By Jeff, AvE, Allen Millyard, and Vintage Underground.
The Alfarrari is an awesome project, and Jeff does everything himself, isn't afraid to screw up, and is always improving and growing his skills, a GRM hero! AvE is hilarious and entertaining, and his experience in remote mining/logging camps shines through and it seems like he knows endless dubious practical fixes for just about everything. Millyard's custom engine configurations are really impressive, and show what can be accomplished with a file, hacksaw, a little finish machining, and a crazy vision. Vintage Underground is a very cool local shop who always has jaw-dropping projects done to an impeccable standard. The shop tour videos feature a mix of drool-worthy exclusive cars plus some drool-worthy unexpected cars being rebuilt to the highest standard, but with a very simple and unassuming presentation.
Oh yeah, also Driving for Answers and FortNine. The former contains such great explanations and really interesting technical details, and the latter is brilliantly-produced and very entertaining.

Kind of a guilty pleasure, must-watch is Sleeperdude. The neighbors you're not sure you want to have, yet kinda do. Junk cars aplenty. A garage that is never clean nor organized. Goats wandering the property. But a sweet family that embraces their Dollar General status and has a ton of fun working on junk together. I despise motor homes, yet I just watched several hour long episodes of them basically rebuilding one from the floor up. Now with subtitles, so you can understand Josh's wife.
Pole Barn Garage, when you are in the mood for dry, self-depracating humor by a guy who is waaaay too much like the participants here.

Fortnine is indeed a gem of a channel, as is my mechanics. Watching him spin up his lathe is a very soothing way to fall asleep lol. Some others that I watch enthusiastically:

History Matters is one I will watch almost immediately. It helps the videos are rarely longer than 4 min. although his older 10 Minute History series is fun to watch. Sometimes you have to go back and pause parts in order to read stuff hidden in the video. He is a master.
For pure GRM'ness, our own Doc Brown has a channel: Robot Cantina. Interesting how his home page has a picture of the Spitfire he sold to me nearly a decade ago.
