What say the hive? Figure me, my codriver, a miata, and not a big cooler. Cause miata. So, two to three sandwiches each, bag of chips, baby carrots, water. Maximum nutritional value meets maximum taste value crossed with best after six hours in a cooler.
So, argue about sandwiches!!!
We do Turano bread type subs. Olive oil and oregano on the bread then ham, provolone cheese, lettuce, some sweet onion, and tomato.
At the Indy 500 we leave so early you eat lunch at 9am.

Peanut butter and jelly
Its got a lot of protein, some simple carbs and complex carbs. You wont have to worry about the ingredients spoiling if your cooler gets warm or they sit out a bit.
We stopped using bread at the track and started using wraps. They pack flat and don't squish. Our go-to is ham, cheese and mustard. If we premake them they get wrapped in foil and stacked in the cooler.

Well, nothing with any condiments on it or any veggies on it. Bread gets soggy almost instantly. Put 'em in a tupperware on the side if you have to.
I like a cuban, but that's easy to get here in Tampa. You can throw them on your dash and let the sun warm 'em up nicely.
Grilled cheese with a slice of ham between two slices of cheese. Use bacon grease as a butter substitute for that extra bit of yumminess.
Officially I am number three on the PB&J but I will add this:
Make them on hot dog buns. The whole crust outside on the bun helps contain the soak. They are smaller and easier to mash if you have dirtyish hands from the first half of the day.

PBJ. Unless you have access to a toaster or frying pan to melt the cheese, this is always the option for a lunch that may have gotten hot or cold when you didn't want it to do that.
No sandwiches.

My wife buys that oily natural peanut butter. While tasty it makes proper bread into a tan paste after a few hours. Her answer involved a wheat bread made of some sort of twigs, stones and cement. My answer was HoDog buns

My traditional track sandwich is ham, turkey, cheddar, mayo, black pepper on french bread. Sometimes I'll use fancy italian hams. I bring the ingredients in a cooler and make it at lunch time though, so it doesn't sit around.

Lebanon bologna, cheese and mayo. Throw in a cooler and assemble when it's time to eat.
Tortillas. F bread.
Roll into whatever is available, even if it's a freiberger peanut butter and olive wrap.

Autocross food should inherently make your cardiologist unhappy
I have been a major consumer of PB&J sandwiches for many years. Now I can't remember the last time I had one.
My regular lunch is an apple, possibly some cheese and always some unsalted mixed nuts. Follow up with a granola bar, and then some really good quality dark chocolate with more nuts. I enjoy it, and a big factor is the preparation takes about 30 seconds.
Many of my autocrosses are long drives away, so getting out of the house fast makes a big difference.

And Lance snack crackers. Stash a pack in each side of the cargo shorts. Small, non-refrigerated, non-messy, and eating a pack can be drawn out as long as necessary with all the interruptions.
