A buddy just dropped off thirty or so pounds of big catfish and I was looking for some cooking ideas.
Bread it and fry it. Only way I'll eat catfish. It's always hit and miss as which pieces may be fishy, but usually that takes the edge off.
My wife has a damn good rub for baking. I love my fried catfish and the rub is a good southern style. I'll check with my wife tonight.
