I just received notification that someone did a Quick Pay with Zelle to me for $35. I don't know them, didn't sell anything or require payment from anyone in that amount. The money is pending in my account. Has anyone seen this before?

I doubt that the transaction is legit, but Zelle is a good secure payment method if you set it up with your financial institution. #1: DON'T use a link that is part of an unsolicited email. If you want to receive the money, check with your bank about setting up Zelle on your end.
The only time I used it was when a foreign national was paying me about $1,000 in 3 payments. After setting it up, it was easier and quicker than PayPal.
No link. Text came from my bank. And the money is pending in the account. I haven't done anything. It just showed up. I am going to check with the bank tomorrow.
There should be a way to identify the party sending you the money. Your bank should be able to tell you the source of the mystery payment.
It has happened to me before. It was an error on the senders end using the wrong send to person. Happened to me with PayPal as well, hazard of having common name. In both cases exact amount was pulled out after verifying with me error. I would not spend the money, nor would I be too worried about it either.
