Consumer recycling revolves around soda bottles and the like. Is there an option for recycling common automotive plastics? Interior parts, hoses, stuff like that?
I'd rather not just throw it away.

Most automotive plastics will be either compounds (rather than near resin) or contaminated. Things like underbody trays and wheel well liners are easily recycled.
The recycling center near me has a big bin for large "hard" plastics, like baby seats, big wheels, yard toys and the like. I don't think they take automotive parts at all.
Because I used to see plastic car parts dumped into property I was walking, I figured it wasn’t recyclable.
I would love it if they were recycleable, but as far as I know they really arent :(
Hopefully they will start using more biodegradeable plastics and lower the plastic content in cars.

Came here to say this...China isn't buying it from us anymore so most of it gets incinerated

Our county still takes it, but a lot gets culled and sent to the landfill. I did an environmental assessment on a former carpet yarn mill that was packed to the ceiling with recycled plastic scrap. As said, China quit taking it, so the owner has stopped paying the note and the bank won’t touch it. If it catches on fire they will never put it out.
