Sausage (as a breakfast food) is only good in gravy form, which is on par with bacon if you make it correctly.

While I agree that pork (including bacon) doesn't need to be fried to death, I'm not a fan of the floppy, stringy, chewy stuff. I like it in the middle: Still flexible when it comes out of the pan, but holds its own weight when it cools of 10 degrees. Maillard is a good thing.

i really don't care... i like bacon just fine- crispy, please, since it's moar funner to eat that way, and it's also finger food then- but i'm sick of seeing everyone talk about it like it's the greatest thing in the history of ever.. for me, the best part of bacon is the smell of it frying in a pan..

Good bacon, cooked well = awesome.

Crap bacon cooked poorly = gross.

Simple equation really. even if you cook crap bacon well, its still crap bacon. If you cook good bacon poorly, then you've wasted good bacon and you should be shunned.

Pigs have got so much more to offer than just bacon though.

It's true.

My wife does that.

Plus, there is a very nice side benefit- if you line the pan well with foil, there is zero cleanup.

Which makes bacon, essentially, the perfect food.

We picked up some local bacon in Wisconsin last week. It was awesome. It was pretty much the only good thing about the whole state.

We were leaving Superior and Minnesota headed to Illinois, but unfortunately didn't have a lot of time to get off the interstate. I didn't see any local cheeses where we stopped, I was kind of disappointed because they advertised local foods and I LOVE cheese. I bet we didn't see more than about 50 cows from the top of the state to the bottom. There was a crap ton of corn and soy beans though. I'm pretty sure I dreamed about corn that night.

It was outstanding bacon though.
