We are stuck at home, so food, right? Had an idea:

Simple recipes that are good.

There was Italian sausage and spinach still on the shelves when everything else was wiped, I could make:

Tuscan Soup

Ingredients:

 6 cups chicken broth
 1 onion, chopped
 1 pack Italian sausage
 3 large potatoes, cubed
 1 bunch fresh spinach, washed and chopped
 1/4 cup evaporated milk
 salt to taste
 ground black pepper to taste

 Directions:


1. Crumble sausage into frying pan. Add chopped onion, and cook over medium heat until meat is no longer pink.
2. Place meat in a large pot; add stock and potatoes. Boil until potato is cooked.  
3. Add spinach. Continue boiling until spinach is lightly cooked.
4. Remove soup from heat, stir in evaporated milk, and season to taste.

One thing I did yesterday to prep for a soup today- since I could not find chicken breast to bake for salads last week, we bought a pair of roasted chickens....

Once those were done, I saved the carcasses- and yesterday, I boiled them into stock.  Added two carrots, two celery stocks, one onion, and some spices.  Boiled for a few hours and today that turns into a base soup.

The soup will be made up- as the idea is that it can be paired with cooked chicken or shrimp.

It will have mushroom, tons of veggies, etc.  

Probably will also roast some veggies to add like the meat.  Stretch it out for a long time.

I'm planning to make one of my German comfort foods tonight. It tends to be pretty heavy so I don't make it that often but it's, quick, tasty and ... bacon.

Käsespätzle - Spätzle (noodles) with cheese (and ham/bacon)

You'll need:

  • Spätzle or similar egg noodles
  • Bacon or black forest ham
  • Grated cheese
  • Onions or shallots

Ideally you'll make the noodles fresh but I don't have the tools for that. They're fairly thick egg noddles with a rough surface texture, but most egg noodles will do. Aldi actually has them right now as it's German week there.

  • Cook noodles as per instructions
  • Either cube some (American style) black forest ham[1] or uncooked bacon. If you're using bacon, crisp it up in a pan with some onion or shallots
  • Drain noodles, put them back into the hot saucepan, mix with bacon/ham and onions
  • Fold in grated cheese - I either use Gouda or a Gruyere mix. I prefer the latter as it adds more taste.
  • Wait until cheese has melted completely
  • Eat enough calories in one sitting to last for a week

[1] Actual German black forest ham that I grew up with is smoked, not cooked and closer in texture to bacon, just with less fat

Just got this one for a chicken something casserole:

4 cups cooked chicken - cubed

2 cups chopped celery

1 can Cream of Chicken soup

4 hard boiled eggs, chopped

1 tsp sale

2 tsp lemon juice

Spoon it all int a 9 X 13" pan.

Topping:

1 cup crushed potato chips

3 cups shredded cheese

Cover with foil - Bake 400* for 20 minutes.

Remove foil and brown the top - about 5 minutes

Taco Soup

1 ¾ lb. Hamburger

1 large onion

1-2 cloves garlic - diced

2 (14.5 oz) cans diced tomatoes - undrained

1 can Kidney Beans - drained

1 can Pinto Beans - drained

1 can Black Beans - drained

1 (16 oz) package frozen corn

1 can (14.5 oz) Chicken Broth

1 can (10.75 oz) Cream of Celery Soup

1 package Taco Seasoning mix

½ cup Half & Half

 

In a large pot, saute’ the onion garlic and beef - drain most of the grease.

 

Add remaining ingredients.

 

Cook on reduced heat for 45 minutes.

 

Serve with Nacho Chips, Avocado and sour cream

Made fried rice last night for the first time ever.

Make rice first, then put it in your fridge for a few days.  You need it to be totally cold.

Chop up whatever veggies you want, traditionally there's carrots and peas in it but I didn't have any peas and substituted celery instead.

Make 1-2 scrambled eggs.

Using oil, cook the veggies until they're a bit soft.  Add in the cooked rice and brown the rice.  Add in the egg, then flavor to taste with soy sauce and oyster sauce. 

You can add whatever meat you want.  I used turkey bacon which turned out well, I'd normally use regular bacon but didn't have any in the house.

We had Steak and French Toast. I kinda wanna claim it as the North Georgia version of "Chicken & Waffles."

Parsnip always ends up in my chicken bone broth / soup base.  It's a strong flavor so maybe start with 1/2.

Why did you need the rice to be cold? What type of rice did you use?

 

I made meatballs the other day. 5 ingredients and half an hour, doesn't get much simpler.

Pound each of ground veal, lamb, and pork. I used Italian sausage this time because I have an abundance.

2 eggs

Half cup bread crumbs.

Roll into 1.5" balls then into your greased muffin pan, 350 for about 25 minutes. 

 

Made it better with sauce, jar of marinara, half a jar of pizza sauce I had in the fridge, and about a quarter cup of my 7 pepper hot sauce. Was awesome on the meatballs and then used it for pizza the next night.

Buy a pack of WonTon wrappers.

Mix some crab meat & cream cheese.

(try Philly CCheese & Lox, more Glouster at low tide taste)

1 tsp per wrap.  Put water on two sides, fold & fork closed.  Pan fry medium heat in oil & butter.

OR....

Use finely chopped Italian Sausage w/peppers & onions.

I made Spätzle last night to have with sauerkraut because Mrs. P didn't take the buns out early enough to make dumplings. I have a press.

Tomorrow's dinner will be like yours minus the kase. I'll use speck, with onions, and serve with cucumber or radish salad

Pyro makes chicken and dumplings using tortillas, they swell up with the broth.

Tonight it was ham sandwiches because we both stopped and got ham one night, guess what will be eating a lot of....

We've used adaptations of this recipe for wings, thighs and tenders at different times:

Garlic Parmesan wings

I used boneless skinless thighs tonight. I cut each thigh into 3-4 pieces, season, and cook at 450 on a cookie sheet for about 10 minutes.
 

While its cooking I make up the wing sauce, and when the chicken comes out I put it in a large bowl and toss with the sauce.
