Stuffing.
I know, I know... It's a regional thing, I'm sure.
But they probably call it dressing in those wacky kinds of places like where the phrase "what kind of coke do you want?" isn't redundant...
I was in OK the first time somebody asked me if I wanted a coke.. and then ask me what kind. I think my brain melted a little
I grew up Irish and Catholic, so that means sautee'd onions & celery into stale bread with poultry seasoning.
My wife grew up near the Canadian border where they browned beef, breakfast sausage, celery, onions, lots of nutmeg and tossed it with mashed potatoes.
Once we married we make a concoction of sautee'd onions, celery, breakfast sausage, beef, stale bread, poultry seasoning and nutmeg.
We both call it Stuffing.
I like the meat part, I guess that's just me though
we call it stuffing too... in our little corner of the Mid-Atlantic

Local:
"Ahmina git me a kokoler. Wonodem orrinj wonzidbe nais".
My mother called it "dressing". Canadians, at least where I grew up, called it dressing, but since I moved to Michigan all I hear is stuffing.
Fillings goes in yer teeth or yer pize.
Whatever you call it, just don't tell the people I'm serving it to that it's made from forgotten bits of leftovers that I found in the freezer. No worries, it will be delicious. I'm making it, after all.
Stuffing, a waste of space I can fill with much better things?
I must admit the sausage one sounds pretty tempting.

Other than the Michigan thing, thats the first part of my response.. The end was going to be, "And she called the basement a cellar, too." Might have something to do with her mother coming from Matlock Bath when she was 18, but I don't know.
Another pointless aside- She called the basement stairs the "cellar way." The only other time I have heard that term was on an episode of This Old House.

What DrBlade says is the definition.
Since hybrids are so popular now, mine is a hybrid dressing/stuffing. When the bird comes out of the oven to rest, I stuff the dressing I cooked into the bird.

Stuffing, whether inside or outside of the bird. Dressing is that liquid stuff you put on a salad.

It's Dressing in the South, Stuffing in the North. However, I moved from the North to the South so it shall be Stuffing.
In reply to Streetwiseguy:
We had to move our old Chesterfield to the cellar once.
In reply to DeadSkunk:
Yeah- that too.
I prefer anus bread if it's stuffed in the turkey.

When you stuff a bra, it goes on the inside. If you wear a dress, it goes on the outside.
So if it goes IN something, it's stuffing. If it goes ON something, it's dressing.
Anyone else who says otherwise is WRONG.
My grandmother is an awesome person and I lover her very much, but I'm going to break a tooth next time she says "dressing".
