I want to make a keglle.  It's a keg converted into a kettle for home brewing.  The hard part is adding a half coupler for a hot water heater element.  Figuring I can get a tight fit would it be best to weld or can a simple braze work?  Braze I think would be easier and less chance of pinholes.  Would a braze be strong enough?

If you don't have capability to stainless weld, silver solder will work.

Brazing will be more than enough for what you are trying to do.

Stainless can be a rear pain to weld, and since you are using it for food prep the downsides of lots of places for bacteria to grow are even more of an issue with welding. Brazing will not cause the 'sugaring' on the back of the connection that welding CAN if you don't get the prep and back-gassing right.

Short answer BRAZE it.
