Looking at options to add on to our existing garage or building another next Spring. Main issue with building another is that the side yard is on a slope which will involve lots of back fill and block to build up to make level. Adding onto the house to the existing garage may be a more cost effective route to add 2 more bays.

Excellent timing, I was pondering the same thing. I have big double bay garage with a nice flat gravel pad behind it. I have a temporary tent on it right now, but the other day I was trying to wrap my head around adding a lean-to type covered structure on to it. Like so:
Seems pretty staight forward to me.

My garage has pretty much that same type lean to on it. It does seem simple, and is quite handy.
Adding the extra bays to the existing will also give more driveway space. With our oldest driving playing musical cars sucks

I looked at adding onto our two car garage in 2012 but because of the real estate downturn at the time it was less expensive to purchase a commercial condo warehouse.
So now I have 1500 sf of shop space 10 miles from my house (and wife).
I retired in 2014 so it's nice to have a place to go most days.

I added one bay onto the side of ours. Had Amish guys do it so it was fairly inexpensive overall though I had to stop them from putting the wrong color siding on it. Apparently all that inbreeding makes them colorblind.
Something to consider: if you don't have room to add a bay onto the side I've seen a few guys build onto the front or back and make the garage another stall or two deeper.
I debated the additional bay for awhile but my wife rightly pointed out the money I was spending on renting a storage unit for one car would be erased in only a few years.
I did that to the shop at my old house. Pretty straight forward and took about a day to install it using tin for the roof.

That would be awesome if it were close to my house but that won't be the case. I would think it would be a good bit cheaper to add on since they would only be putting up 3 walls instead of 4 but maybe taking down a wall already there may make it about the same.
My garage is 26 ft deep. If I could add 10, it's a 5 car garage (thanks to a lift). with a little room left over to work.
One corner is right at the setback limit though so it would be a great big pain. It would also be pretty expensive because I'm on a steep hill.
I was quoted just with the block work alone for the foundation around $10k
