CHILI. red, yellow and green peppers, onion, (usually) 2lbs of ground turkey, can of kidney, red chili and pinto beans all thrown into the crock pot with 3 chopped tomatoes, 2 packages of chili seasoning and let it cook about 4-5 hours on low. Eat it all week.
Tartiflette.
Potatoes, onions, white wine, and lardons if you can get them, salt pork if you can't. Smothered in Reblochon cheese - or Brie in a pinch.

Dropping temperatures mean more crock pot and roaster cooking for me, and being as far behind on the website as I am, this may turn into a productive cooking winter so I'll be keeping an eye on this thread for some ideas.
I like how you roll. Crawfish Etoufee is one of my favorite things on the planet. The duck is a superior meat bearing animal as well. Smoked hot wings made with duck instead of chicken is magic.
Goddamn it. Now I'm going out in a snow storm to get things to make.
Second and very close to chilli is a grilled cheese sandwich and tomato soup. I like the simple things.

Time to make up some Gumbo again.
Chicken, Shrimp and Sausage Gumbo
Recipe makes ~ 4 quarts
2 Boneless Skinless Chicken Breast halves
1 pkg (4 links) Chef Aidells Cajun Style Andouille Sausage
1 16 oz pkg Frozen Cooked Tail-off Small (salad size) Shrimp
1 14.5 oz can College Inn Chicken Broth (Low Sodium)
1 14.5 oz can Water
3 14.5 oz can Margaret Holmes Tomatoes and Okra
4 Stalks Celery
1/2 Medium Onion
2 Medium Green Bell Pepper (Optional)
½ Cup Minute Rice
1 Tbsp McCormick’s Creole Seasoning
1 Tbsp Zatarain’s Gumbo File’
Cut Chicken into 1/2" cubes
Slice Sausage in 1/8” slices
Cut Celery and Pepper(if used) into small pieces
Chop Onion
Put Chicken, Broth and Water in large pot, bring to boil over medium high heat
Add Sausage and bring to boil again
Add Celery, Onion and Peppers(if used) and bring to boil again
Add Tomatoes and Okra, and Creole Seasoning and bring to boil again
Add Shrimp and Rice and bring to boil again
Turn off heat, add Gumbo File’ and stir in, let sit 5 minutes before serving

I have really enjoyed making various soups. Can never go wrong with home made chicken soup. This past weekend I made potato leek soup for the first time. It was wonderful. I'm going to do clam chowder sometime in the next week.
I love soup. Double the comfort-food quotient if paired with grilled cheese.
Clam chowder is one of my favorites, but the wife and girl-spawn won't eat it.
So, I start to make it and in the final steps, 3/4 becomes potato, bacon and onion chowder and 1/4 becomes clam chowder. Making multiple soups with a similar base and then diversifying in the end stages is a great way to make a pile of food you won't get tired of.
S.O.S. aka cream chip beef on toast.
I also appreciate anything served over hot rice on a cold winter day. Personal favorite is lamb curry.
Beef stew, pot roast, bacon pancakes, my annual tallow rendering and fry various things binge.

Chili's been mentioned a few dozen times, so my other crock pot dish is Chicken n Noodles. 3-4 boneless skinless chicken breasts, cream of chicken soup, chicken broth, stick of butter, and some frozen noodles (I add dumplings as well).
Everything but the noodles for about 4-6hrs, shred the chicken and add noodles, another 2hrs.

I miss hearty and satisfying Winter food. Summer kills my appetite and desire to cook....
Ugh just had my third night in a row of chili. I'm sick of it. My favorite is potatoes soup, picture runny mashed potatoes with onion and ham or bacon. Then add homemade catsup. I can eat it until I can't move. Best seven with some crusty buttered italian bread bc carbs

Honey ginger ramen noodles
Pea soup and a tortiere. Even canned Habitant pea soup is good. I need to bring some in from Canada next trip. OR, pea soup and a garlic bologna sandwich.
Mom's peanut butter cookies. A stack of 5-6 and a glass of milk and that's about as close to Heaven as I can get.
