I ran across this and thought it may be helpful. There seems to be a lot of interest in cafe looking bikes, but the proper shape and sizing of the seat will make or break the project.

Hope this can help!
i heart the CX500 and will be building one when i finish the ninja 250 that i haven't started yet.
LOVE the idea of using the back section of a gas tank for the cowl! Its so simple even I could make it look half decent...
Makes me miss my CX500 and the Cafe project I decided against.

There is a lot of DIY help here:
Tanks and Seats
Very impressive fabrication - makes me miss my old CX500.
Fiberglass is dead simple.
Spray glue, foam from Home Depot, bread knife, electric sander are the tools needed to get here -

Foil, packing tape, wax -

Mix resin and fiberglass mat from autozone (or carbon in my case). Use a few disposable paint brushes to work it.

Bondo, sand, paint

^^^ nice paint, that.
Didja hire the guy from Royal Enfield to do the striping?

I agree that the DIY fiberglass/carbon posted is gorgeous, but all I can say is wow for the guy who came up with the hard hat idea, that is genius...
