The AMA supports that through a network of smaller organizations. I would venture that WERA is the closest to you.

They have a novice "school" that would be the best place to start. They used to rent gear and bikes, not sure if they still do.
Where are you located? I know Thunderhill does more bike days than car days (like 2-3 bike events EVERY week).
This thread has got me wanting to do track days on my SV this summer. Now I just need to get some real gear (i have gear but not a full suit and boots).
Evan (and original poster) - check out the link to Sportbike Tracktime. I looked, they do still rent full leather suits. Mid Ohio is so close, you really have to give it a shot. I instructed with the novice class there and at other tracks with SBTT and they are the best place to get your feet wet with track riding.
There is also a new track in KY that I have not been to yet. If in Alabama - you have lots of choices - Barber being the #1 by far.
They rent full leather suits? Hmmm I guess there is really no excuse for me not to get out there then. I used to be about 20 minutes from mid ohio but now it's about 40, still very close. Hopefully I can book some days this spring and summer.

We did a private test day years ago south and east (IIRC) of the Talledega Super Speedway on a track that seemed to be primarily suited for bikes. I forget the name of it...
