The phrase "rebuilt motor" more often than not actually scares me away rather than making me confident it's a good thing.

I wouldn't be worried about any structural bits really. Possibly rear door sills. Anything else is an easy bolt-on affair to replace/fix.
My first drag car was a '94 wagon nitrous bomb. I'd love to build one again, only correctly this time.
The '95's got the better interior and real seatbelts, but they also got the full metal roof instead of the '93-'95 polymer one.
