I've ran into a lot of people in the cary/raleigh/durham area here and figure this is worth a shot. I've been wanting a project car from the 60s or 70s for about two years now but my apartment complex won't let me. Thing is my knowledge about mechanics is very minimal. I was hoping someone in the area had a project they were working on and could use an extra hand. I'd learn by helping.
I'm in the area, but I'm not doing any classic cars at the moment. What might work well for you is to pick up a running example of a car and start doing the normal maintenance on it.
I've also found that if you don't make a huge mess of things you can sometimes work in apartment complexes without making anybody mad. Some complexes even have overflow lots for boats/trailers/etc. that are tucked back on the property where car work can be done on the weekends.
Also in the Raleigh area but not really working on a classic right now. Back when I lived in an apartment (Startford, Cary) I always worked on my cars in the parking lot. Installed a rollbar in the Miata, wetsanded a BMW (they didn't like that one) and anything else that may have come up
