Agree with most of what's being said. I used to have a Lotus 7 clone with a Chevy v6 in it. While it made me look good, it didn't teach me much.
You can't break track days into too many groups, but it might be an idea to start grouping them more by lap time than experience. As they say, speed doesn't kill. Speed differential kills
